SAKEBARO KYOTO
Project Description
A traditional machiya townhouse in Kyoto’s Higashiyama district was reimagined as an extraordinary space for experiencing Japanese sake.
By reconstructing the ways sake was enjoyed during the Edo and Azuchi-Momoyama periods in a contemporary context, the design offers a sensory sake experience in which the textures and shadows of tableware, as well as the aromas and flavors of sake and cuisine—details often overlooked under bright lighting—can be deeply appreciated within intentionally subdued illumination.
At the façade, shadows of leaves swaying in the moonlight are projected onto shoji screens, drawing the attention of passersby. Beyond the heavy entrance door finished in tin plaster lies a gold-leaf counter that serves as the central axis of the first-floor space. Each sheet of gold leaf was carefully applied by hand by skilled craftsmen. From the atrium above, rain and snow gently fall as part of a theatrical installation, creating a dreamlike atmosphere where guests can savor sake in an extraordinary sense of stillness.
Spread out at the end of the first-floor corridor unfolds a fantastical courtyard where half mirrors reflect light and structure into layered compositions, forming a tranquil art-like environment. Guided only by faint light, guests proceed along the second-floor corridor into a serene seating area composed of black tatami and black plaster finishes. Facing cushions and low dining tables naturally bring guests closer together, encouraging intimate conversation and allowing them to slowly engage with the sake and cuisine.
Within the dimly lit room, stand lights quietly reveal the contours of the space. Shadows cast upon the shoji screens evoke the silhouette of a maiko, enhancing the solemn and introspective atmosphere. The space is designed to deepen one’s appreciation of the aromas, flavors, and lingering finish of Japanese sake through a calm and immersive sensory experience.
Representative Shigeru Sato Born in Tokyo in 1969. After working at Saeki Design Co., Ltd. and Espace Japan Co., Ltd. , he joined GLOBAL-DINING Co., Ltd. in 1998.
He is in charge of store planning, design and management in the headquarters planning department. His main achievements include ZEST Ebisu, Stellato, Café La Boheme in Ginza, Glien passage in Odaiba, Gonpachi in Nishiazabu, Decadence du Chocolat in Daikanyama, g-zone in Ginza, etc.
KNOT Limited established in 2005. It mainly operates restaurants, including Charbrolled Horumon Gu chain stores, PASTAVOLA chain stores, Maid Cafe/at-home cafe chain stores, Motenashi Kuroki, and SAKEBARO chain stores.
